Elle's Kitchen: Sugar Cookies

Tasty & Fun


I have been making these sugar
cookies for over 20 years.


Ingredients:

For the Cookies:
1 stick butter
1 cup sugar
2 cups flour
1/4 teas. salt
1/2 teas. baking powder
1 large egg, lightly beaten
2 tbls. brandy
1/2 teas. vanilla

For the Icing:
1 1/2 tbls. meringue powder
(available where Wilton is sold)
2 cups powdered sugar
3 tbls. water


Cream the butter and the sugar.


Sift together the dry ingredients
and add to the butter & sugar;
beat well. 


Add the egg, brandy and vanilla
and beat again until well mixed.
Shape dough into 2 flattened
rounds, wrap and refrigerate for
at least one hour.


Preheat oven to 350F.

On a well floured surface, roll dough
until 1/8" thick.  Cut with cookie cutters
and place on baking sheets lined with
parchment.  Scraps of dough can be
rolled out again.

Bake for 10 minutes, do not brown.


Cool on a rack.


For the frosting, combine all
ingredients in a large bowl and
mix for 10 - 12 minutes with
a hand mixer or 8 -10 minutes
with a stand mixer.  Then frost
and decorate the cookies.
Allow frosting to set.
