Elle's Kitchen: A Lovely Lemon Pie

A Cool Treat for a Hot Day


Here in the American Midwest we
are having a heat wave.  We are not
alone, much of the country is sweltering.

  What is the weather like where you live?

Lovely Lemon Pie

Twelve 2 1/2" graham cracker squares
4 teas. cold butter
1 envelope lemon flavored jello
1/2 cup boiling water
1 envelope instant vanilla pudding mix
2 cups lemon nonfat yogurt
1 cup skim milk
1 cup plain nonfat yogurt
lemon slices & mint

Preheat oven to 350 degrees.

Spray a 9" pie plate with cooking
spray.  In a food processor, process the
crackers until fine crumbs.  Add the
butter and process until evenly blended.
Press the crumb mixture evenly in the
bottom and part way up the sides of
the pie pan.  Bake until browned, 6 to 8
minutes.  Cool on a rack.

In a small bowl combine jello and
water; stir until completely dissolved,
about 2 minutes.  Set aside to cool.

In a large bowl, with an electric mixer
at medium speed, beat the pudding mix,
1 cup of the lemon yogurt, the milk and
the plain yogurt.   Add the gelatin mixture
and stir until thoroughly combined.

Pour into the cooled crust; refrigerate
covered, until firm, at least 8 hours.
Serve topped with remaining lemon yogurt
and garnish with lemon slices & mint.
