Elle's Kitchen: Guacamole


Growing up, there was not much Mexican
food in my life.  When Chi-Chi's opened on
the east coast, I admit I tasted guacamole for
the first time in one of their restaurants.
I had a friend who had spent the summer at
the Santa Fe Opera and when he came home
he told me he learned to make a mean guacamole.
Holy Guacamole!
You mean you can make this yourself??

Okay, in my youth, I could bake up a storm, but
I didn't know much about cooking.  Avocadoes
at that time were not a staple in our grocery stores.
And who knew what cilantro was?

Now, jump ahead a few decades & I now I can
make a mean guacamole.

Ingredients
2 to 3 ripe avocadoes
1/2 of a red onion, minced
a serrano chile, seeds removed, minced
 the juice of a lime
a handful of cilantro, finely chopped
a roma tomato, diced
1/2 teas. sea salt
black pepper

Peel the avocado and remove seed, mash
in a medium bowl using the back of a fork.
Add the rest of the ingredients except the
tomato and stir together.  Place plastic wrap
directly on the mixture to prevent browning
and refrigerate.  Add tomato just before serving.
Serve with tortilla chips.
And margaritas...


Add friends for a party!

  1. Remember the day when we found ripe avacados at 3 for a dollar? We ate them all week!
