Elle's Kitchen: Sauteed Cabbage

This is a quick and easy side dish that
goes great with pork dishes.

Slice a small head of cabbage very thinly.
I use a mandoline on a thin setting.
Drizzle some olive oil in a saute pan and
add a tablespoon of butter, place over
medium high heat.  When butter is melted
add cabbage and season with salt and pepper.
Then just let it cook as you slowly turn the
cabbage with a pair of tongs.  Keep cooking it
low and slow until the cabbage is a lovely
brown color ~ keep the heat low enough
that it does not burn.

We served this last night with our
Crockpot Pork Loin that you can
find here and some roasted veggies.
The pork dish is a favorite of the guy
from Bloomington and today he heads
back to school to start his Spring semester.
