Elle's Kitchen: Peach & Brie Quesadillas

A French Twist on the Classic Quesadilla


This is a tasty way to start the
New Year.  Low in calories and
fat,  serve with the honey lime
dipping sauce for extra zing.  Eat
well and still keep your resolutions.


Ingredients:

For the sauce:
2 Tabl. honey
2 teas. fresh lime juice
1/2 teas. grated lime rind

For the quesadillas:
1 can peach halves, in water,
sliced thin.
1 Tabl. chopped chives
1 teas. brown sugar
3 oz. Brie, thinly sliced
4 - 8" whole wheat tortillas
cooking spray


To make the sauce, combine sauce
ingredients and whisk together.


To make the quesadillas, combine
peaches, chives and sugar and
toss gently .


Heat a nonstick pan over medium
high heat.  Arrange 1/4 of the cheese
and 1/4 of the peach mixture over 1/2
of 4 tortillas, fold tortillas in half.
Coat pan with cooking spray.  Place 2
at a time in pan and cook 2 minutes
on each side.  Serve with dipping sauce.
