Elle's Kitchen: Pear & Goat Cheese Salad with Tangerine Viniagrette

New Recipe Inspired by Our Houseguests


Over the New Year's weekend we had
delightful houseguests and a few days
after their visit we received a box of
Harry & David pears as a gift.  They are
the best pears I have ever had.  Whenever
I get such a lovely gift I'm in heaven.  Earlier
in the holiday season we had other delightful
houseguests who came bearing gifts, including
a delicious goat cheese.  Here is a recipe that
combines the pears and goat cheese.


Ingredients:

For the salad:
Baby lettuces
A ripe pear, diced
Goat cheese, crumbled

For the Viniagrette:
the zest of one tangerine
the juice of one tangerine
1 tabl. of rice vinegar
2 teas. sugar
salt & pepper
1/8 cup extra virgin olive oil

Combine salad ingredients in a bowl
and toss.  Combine viniagrette ingredients
together in a jar or small container and
shake.  You will have enough viniagrette
for two salads.  And you will want to have
it again, it is light and zingy and delicious!
