Elle's Kitchen: Corn, Avocado and Tomato Salad

A Perfect Summer Salad


When you have fresh corn and
tomatoes available from your
garden or farm stand, it is time
to make this salad.


To make the dressing, whisk together:

2 tabl. olive oil
1 tabl. fresh lime juice
1/2 tsp. grated lime zest
1/4 cup chopped cilantro
1/4 tsp. salt
1/8 tsp. pepper


Add:

2 cups cooked fresh corn
1 avocado, diced in 1/2" pieces
1 pint grape tomatoes, quartered
1/2 cup finely diced red onion
